180 gm macaroni
4 cubes cheddar cheese
4 cheese slices
4 slices bread ( white or brown)
2 onions
1 inch ginger
2 tomatoes
3 cloves garlic
1 tbsp red chilli powder
1 tbsp garam masala powder
2 green chillies
1/2 tsp turmeric
1/2 tsp sugar
butter
vegetable oil
salt to taste
water
METHOD
1. Peel n chop the onions, garlic, ginger. Dice the tomatoes and green chillies.
2. Throw the above ingredients in a blender and make a puree. Add water if required.
3. In a nonstick wok or a large saucepan heat 4 tbsp vegetable oil. (actually any kind of oil: olive oil , sesame oil...take your pick...but keep in mind not to use a strong flavoured oil...or else it will influence the taste)
4. Add the tomato onion puree. Add garam masala, turmeric powder, chilli powder, sugar and salt as per taste and stir.5. Let the paste cook for about 5 to 7 mins. Stir occasionally.
6. In a separate pan, boil 2 cups of water, add 1 tsp salt, 1 tsp oil. Boil the macaroni for 5 to 7 mins.and drain. Add 1 tbsp butter and keep aside. ( keep 2 cups of macaroni water aside for cooking. The starch in the water will help make the sauce thicker).
7. Meanwhile the puree will start to come together and stick to the bottom of the pan.Tear off chunks of bread and add to the gravy. Stir for another 30 sec and den add 1/2 cup of pasta water. Stir for another min and finally add the macaroni and stir for 2 mins. Add grated cheddar cheese and cook for 3-4 mins with occasional stirring. Add 1 cup of pasta water and put the lid on let it simmer on a low heat till the gravy thickens.( do not stir)
8. Take off the lid. Put cheese slices on top and cover for 2 mins till the cheese melts. Turn off the heat and turn on the compliments.
